Crockpot Amazingness

I've been in love with crockpot meals lately. I'm fairly convinced that crockpots are the kitchen appliance specially created for busy families by the angels above. Even over the summer, I have been making and using freezer crockpot meals to stay on top of cooking.

What do you know, having an infant means that you can't do everything you used to!

Last night, we tested out a new recipe I got from this blog, thanks to a friend linking on Facebook. It was the Lime Salsa Chicken last night, and it turned out great!

I know, it looks kind of gross, but very tasty!

It reminded me of Tijuana Flats rice bowls, but tastier! And the chicken stayed nice and moist, which has been a problem I'm seeing with some of the Crockpot recipes. The recipe at Kojo Designs recommends that you serve with corn tortillas, we didn't have any so I just made extra rice instead. I also left out the jalapeno peppers (can't handle the spiciness, I'm a wimp) but I expect that would be very good if you like it hotter.

The Beginning

Hello!

 Short intro...

 I'm a teacher in my mid-twenties. I teach reading to middle schoolers. This will be my second year teaching reading. Before I was teaching elementary school, but I love middle school more!

 I live in Florida.



 Yes, that Florida.

Yikes.

I'm married (five years) to a great guy who is getting ready to start his college education.
That's him and me. My hair's not red anymore though.

We had a baby six months ago. She's just about the cutest thing in the entire world. My girl is six months old today, actually!
AAAHHHHH THE CUTENESS!

This is my writing experiment. I need an outlet that doesn't involve diapers or paper grading, so I thought I would try my hand at writing. I enjoy it quite a bit, but it fell by the wayside for other ventures like getting my degree, being pregnant, and having a newborn. I hope to write about whatever strikes my fancy. My life at the moment is filled with trying to always look at the positive and enjoy every moment, because you never know when things will change. 

That has been driven home this year with all the crazy events, both good and bad. My baby has been a constant source of joy, even through the tears and trials of trying to take care of a non verbal human. I also lost two grandparents this year, which was very hard. I was fortunate to have both meet the baby before they passed, even if she won't remember it, I will hold the memories dear. 

I hope to honor their memories by beginning to accomplish my goals in life and beginning to overcome any fears. Part of that comes in writing this blog. A life goal is to write more, and that begins here.
